Are you thinking about eating more plant-based meals? Have you Veganuary and want to make it stick? One of the easiest meals to start with is breakfast – if you’re a breakfast eater that is! I usually wake up hungry so I love a big bowl of porridge and fruit.
Make these simple plant-based swaps
Swap cow’s milk in your oats ➡️ Organic soya milk, oat milk, hemp milk, almond milk etc.
Swap cow’s milk in tea/coffee ➡️ Oatly barista works amazingly in coffee and soy milk with tea/chai
Swap eggs ➡️ Tofu scramble with some veggies and kala namak (Indian black salt which adds a sulphuric taste)
Swap egg fritatta ➡️ Chickpea and veggie fritatta (chickpea flour is easy to find in Indian stores/health food stores)
Swap toast with butter ➡️ Wholegrain toast with peanut butter, sliced banana and cinnamon
Swap dairy yoghurt with granola ➡️ Coconut yoghurt with vegan granola (preferably homemade! Check out my oil-free granola recipe on my website)
Swap pancakes made with egg ➡️ Buckwheat or oat flour, flax & banana pancakes.
Prefer a savoury breakfast?
If you don’t have a sweet tooth, there are lots of other options. How about trying other savoury breakfast options from around the world? Asian breakfasts are usually savoury. My favourites are homemade dosa, idli and vegan congee. There are lots of recipes online. You could also make an entirely plant-based Full English with homemade hash browns, vegan sausages, baked beans, grilled Portobello mushrooms, spinach and tomatoes.
